Spinach & Strawberry Salad
4-5 cups Fresh baby spinach or mixed baby greens
1-2 cups Fresh sliced strawberries
3/4 c. Slivered Almonds (can add sesame seeds)
Handful of red onion
Dressing
1/2 cup white sugar
1/2 cup white sugar
1 1/2 tbsp. minced green onion
1/4 cup apple cider vinegar
1/4 cup apple cider vinegar
2 tsp. poppy seeds
1 1/2 tsp. paprika
1/2 cup olive oil
Using a container with a tight lid, mix dressing ingredients together and shake well. Layer spinach, sliced strawberries, onion and nut mixture in a bowl. Toss with dressing when ready to serve. Makes enough dressing for two large salads.

This is one of my summer salad faves, too. Some goat cheese and candied pecans just puts it right over the top!

Yum! This sounds so good! I used to make baby spinach salads with strawberries, mushrooms and red bell peppers. I never thought of adding almonds, that would have made them extra delicious!

Really great salad and agreed that goat cheese and nuts (candied walnuts) would put it over the top. One note -I find it a lot better with about half as much sugar. It's a little too sweet.
