Yummy Rhubarb Dessert

This past weekend I was out in the garden and noticed that my Rhubarb bush was huge-yay!! So I instantly knew what I had to do and headed to the store, rushed home and got out the baking stuff...

Plus, it's been ages since I shared a recipe with you guys!!! Best of all this recipe is super easy and soooooooooooo delicious...no, it's really that good and totally deserved all those o's! Quite possibly my favorite dessert ever!


Rhubarb Dessert

4 cups chopped rhubarb
3/4 cup of white sugar
1 small pkg strawberry flavoured jello
1 pkg of single white cake mix
1/2 cup of water
1/3 cup of butter


Preheat oven to 350 degrees.

In a strainer, pour boiling water over top of chopped rhubarb. Put into an 9x13" pan.

Sprinkle white sugar evenly over top of rhubarb and then sprinkle the strawberry jello powder on next. Add cake mix package (dry) on top of that. 

Pour water over top of everything and randomly dot the top of the mixture with the small chunks of butter.

Bake for 35 minutes.


Ahhhh...heaven...I am drooling now and wish I had more!!

Yumo! I miss Rhubarb. You can't find it around here anymore. I remember picking it fresh as a kid in our neighbor's yard and dipping it in sugar!

I love the easiness of this recipe and can't wait to try it. For some reason it is hard to find rhubarb un my area. My grandmother had a rhubarb plant in the yard and I loved her rhubarb sauce.
